Peanut Butter Brownie Concotion















This tasty treat was served as dessert at our latest Food Group dinner party. It's essentially a giant brownie topped with peanut butter cookie dough, smothered in chocolate ganache and topped with chopped peanuts. In the immortal words of the legendary Ina Garten, "Who wouldn't love that?"

The process...














You basically start by baking up some brownies. You can use any recipe you like. I took a short cut here by using a boxed brownie mix. I'm usually a great proponent of making everything from scratch, but I'm not opposed to making things a little easier now and then. Especially when it comes to boxed brownies. I have yet to find a home made brownie recipe that yields a final product that's anywhere near as chewy, fudgey, and delicious as boxed brownies.















Next I whipped up this fantastically peanut-buttery dough that's pretty much just peanut butter, sugar, butter, flour, and awesomeness...















Which is then spread lovingly on top of the brownies.















Then comes one of life's more pleasurable activities -- melting chocolate on a double boiler. Now this ganache recipe called for heavy cream, but I employed a healthy trick by using fat free evaporated milk instead. It gets the job done just as well and makes you feel slightly less bad about the three pieces of brownie you are inevitably going to eat.















Spread that ganache!















Top with chopped peanuts and you're done. I must say, the silicone baking pan was key in being able to turn the entire dessert on to the serving plate. So there's a handy tip for you.
